Cooking spray

Uncooked 93% lean ground turkey
½ pound(s)
Fresh sage
2 tsp
Fresh thyme
1 tsp
Table salt
½ tsp
Black pepper
¼ tsp
Egg

Instructions

In a large bowl, combine the turkey, sage, thyme, salt, and pepper. Using a fork, gently mix until seasonings are evenly incorporated but not over mixed.

Place a sheet of parchment paper (or nonstick foil) on a work surface. Divide the turkey mixture into 8 equal portions and place on parchment using about 2 tablespoons of mixture for each. With damp hands, shape into 2 1/2-inch patties (don't worry if edges crack).

Generously spray a large nonstick skillet with cooking spray and set over medium heat. Place the patties in the skillet and cook until the sausages are lightly browned and just cooked through, about 2 minutes per side. Meanwhile, scramble eggs to your liking with cooking spray, salt, and pepper.
