A satisfying, fully homemade breakfast, this recipe is easy and fast enough for weekday mornings. Make a batch of the sausage patties over the weekend and hard boil some eggs for no-cook breakfast all week long. Kids are sure to enjoy this meal as well. Add some toast and you can make a quick-and-portable breakfast sandwich.


Ingredients
Uncooked 93% lean ground turkey

Fresh sage
2 tsp
Fresh thyme
1 tsp
Table salt

Black pepper

In a large bowl, combine the turkey, sage, thyme, salt, and pepper. Using fork, gently mix until seasonings are evenly incorporated but not over mixed.

Place sheet of parchment paper or nonstick foil on a work surface. Divide the turkey mixture into 8 equal portions and place on parchment using about 2 tablespoons of mixture for each. With damp hands, shape into 2 1/2-inch patties (don't worry if edges crack).

Generously spray a large nonstick skillet with cooking spray and set over medium heat. Place the patties in the skillet and cook until the sausages are lightly browned and just cooked through, about 2 minutes per side. Serve with eggs of choice.
