A hearty breakfast in under 20 minutes? Yes, please! Make your own sausage-style patties from ground turkey and herbs to complement your eggs served scrambled, poached or fried. A satisfying, fully homemade breakfast, this recipe is easy and fast enough for weekday mornings. Make a batch of the sausage patties over the weekend and hard boil some eggs for no-cook breakfast all week long. Kids are sure to enjoy this meal as well. Add some toast and you can make a quick-and-portable breakfast sandwich.
Uncooked 93% lean ground turkey
2 tsp, or 3 tsp, finely chopped
1 tsp, finely chopped
¼ tsp, or 1/2 tsp
4 large egg(s), poached, scrambled, or fried
- In a large bowl, combine the turkey, sage, thyme, salt, and pepper. Using fork, gently mix until seasonings are evenly incorporated but not over mixed.
- Place sheet of parchment paper or nonstick foil on a work surface. Divide the turkey mixture into 8 equal portions and place on parchment using about 2 tablespoons of mixture for each. With damp hands, shape into 2 1/2-inch patties (don't worry if edges crack).
- Generously spray a large nonstick skillet with cooking spray and set over medium heat. Place the patties in the skillet and cook until the sausages are lightly browned and just cooked through, about 2 minutes per side. Serve with eggs of choice.
