Ingredients

uncooked 93% lean ground turkey

½ pound(s)

fresh sage

2 tsp, or 3 tsp, finely chopped

fresh thyme

1 tsp, finely chopped

table salt

¼ tsp, or 1/2 tsp

black pepper

¼ tsp

4 large, poached, scrambled, or fried

Instructions

  1. Combine turkey, sage, thyme, salt, and pepper in large bowl. Using fork, gently mix until seasonings are evenly incorporated but not overmixed.
  2. Place sheet of parchment paper or nonstick foil on work surface. Divide turkey mixture into 8 equal portions and place on parchment using about 2 tablespoons turkey mixture for each. With damp hands, shape into 2 1/2-inch patties (don't worry if edges crack).
  3. Generously spray large nonstick skillet with nonstick spray and set over medium heat. Place patties in skillet and cook until sausages are lightly browned and just cooked through, about 2 minutes per side. Serve with eggs of choice.
  4. Per serving: 2 sausage patties and 1 egg
