The generous 1/2-cup serving is enough for 2 8-inch soft tacos per person. A mere seven ingredients come together quickly and with only one pot. This is perfect for friend-filled taco Tuesday or a Mexican-inspired Friday night feast. Kids sleepover or Summertime dinner, there is always a good use for taco meat. Make it for a small dinner and save some for another taco night or make a small batch of taco soup by adding some corn, bell peppers, stock and black beans. Use cubed chicken breast in place of the ground beef if you prefer.

Instructions

  1. In a medium bowl, combine tomatoes, garlic, parsley, salt, red pepper flakes and oil; set aside.
  2. Place a medium to large nonstick skillet over medium-high heat; add meat and cook, stirring and breaking up meat as it cooks, until cooked through, about 5 minutes.
  3. Stir in tomato mixture and cook until heated through, about 3 minutes more.
  4. Serving size: 1/2 c
