A recipe for a garnish may seem odd but this one should be committed to memory! Ready in a snap, you can use this clever topping to elevate a simple soup for a dinner party, dress-up leftover soup for another meal that week or top crispy bread for a terrific last-minute side to your favorite soup. The umami of the mushrooms and creamy tang of the goat cheese can enhance pureed vegetable soups such as butternut, tomato, or sweet potato. You can't beat it for time, versatility and only 4 ingredients.

Ingredients

Extra virgin olive oil

1 tsp

Cremini mushroom

2 cup(s), sliced, thinly sliced

Soft goat cheese

1 Tbsp

Fresh basil

4 leaf/leaves, cut into thin ribbons

Instructions

  1. Heat the oil in a medium nonstick pan over medium heat. Add the mushrooms and sauté until softened, about 5 to 7 minutes.
  2. Stir ¼ of the mushrooms into the soup. Top each soup bowl with 1 teaspoon goat cheese and some of the basil ribbons.
