extra virgin olive oil1 tsp
cremini mushroom(s)2 cup(s), thinly sliced
soft-type goat cheese1 ¼ Tbsp
basil4 leaf/leaves, cut into thin ribbons
- Heat the oil in a medium nonstick pan over medium heat. Add the mushrooms and sauté until softened, about 5 to 7 minutes.
- Stir ¼ of the mushrooms into the soup. Top each soup bowl with 1 teaspoon goat cheese and some of the basil ribbons.
