Salmon is a richly flavored fish that stands up well to more assertive ingredients like the Dijon mustard used here. We mix in little honey to tame the heat the mustard before it is spread on top of the fillets, and finish it off with little ground coriander, a spice with a pleasant herby-lemony flavor. You could replace the coriander with ground cumin, curry powder, or ground fennel seed or fennel pollen, if you’d like. Or just stick with the honey mustard alone - that’s delicious too!

Uncooked salmon

20 oz, 4 (5-oz) fillets

Kosher salt

Instructions

  1. Preheat the broiler. Line a sheet pan with foil. Arrange the salmon on the prepared pan in a single layer and season with salt and pepper. Spread the honey mustard on the tops of the fillets. Sprinkle with the coriander. Broil the fillets, watching carefully to prevent burning, until browned on top and just firm and opaque in the centers, about 5 minutes.
