After a quick cook in the microwave, baby potatoes grill up tender and flavorful making them a fabulous BBQ side dish. If using wooden skewers, make sure to soak them in water for 20 minutes first to prevent charring. You can also try skewering the potatoes on thick rosemary stems for a beautiful presentation. Grilled chicken with tangy barbecue sauce or simple grilled flank steak accompany these potatoes well.

Uncooked baby potatoes

¾ pound(s), red (about 1 inch each), rinsed

Uncooked baby potatoes

¾ pound(s), white variety (about 1 inch each), rinsed

Olive oil

Instructions

  1. In large microwave-safe bowl, add potatoes and 1⁄4 cup water. Cover and microwave on High until potatoes are tender, 10 to 12 minutes. Drain well and set aside until cool enough to handle.
  2. In medium bowl, toss potatoes with oil, rosemary, garlic, salt, and black pepper. Using 6 metal skewers (or 6 long, very sturdy fresh rosemary sprigs), thread 5 potatoes on each skewer, alternating red and white potatoes.
  3. Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire in charcoal grill. Grill potatoes, turning once, until charred and marked from grill, about 5 minutes.
  4. Serving size: 1 skewer
