Our version of this French-inspired favorite is easy to prepare and ready to serve in just under an hour. Pounding the chicken evenly is key to getting all of the ingredients stacked and rolled evenly. The layers of flavor created by flouring the rolls, then coating them with honey mustard before finishing with breadcrumbs make the perfect crispy-delicious outer shell to the tender chicken, smoked ham and gooey Swiss cheese. Excellent for children but nice enough for a special dinner, this dish makes an ideal main for Easter and Mother's Day meals. Serve with seared green beans and a simple green salad. Trade the honey mustard out with a nice Dijon mustard for a more zingy flavor. Try haricot vert or French green beans. If you have true baby carrots with tops in your supermarket, buy a bunch, cut off the green tops and roast them whole until tender and slightly caramelized for a stunning side dish.

Uncooked boneless skinless chicken breast

1 pound(s), four 4 oz pieces

Cooked lean ham

3 oz, four 3/4 oz slices

Low fat Swiss cheese

3 oz, four 3/4 oz slices

All-purpose flour

¼ cup(s)

Honey mustard

¼ cup(s)

Seasoned breadcrumbs

½ cup(s), Italian-style

Instructions

  1. Preheat oven to 400°F. Coat a baking sheet with olive oil cooking spray.
  2. Place chicken breasts between two pieces of plastic wrap and pound to 1/4-inch thickness; remove plastic wrap. Arrange 1 slice of ham and 1 slice of cheese on each chicken breast.
  3. Starting from shorter end of chicken, roll up breast into a tight pinwheel. Tuck in ends. Secure with toothpicks.
  4. Place flour, honey mustard and bread crumbs in 3 separate shallow bowls. Add chicken to flour; turn to coat. Transfer chicken to honey mustard; turn to coat. Place chicken in bread crumbs; turn to coat.
  5. Transfer chicken to prepared baking sheet and coat with cooking spray. Bake until chicken is golden brown and cooked through, about 40 minutes. Remove toothpicks and serve.
