Make this recipe your own by mixing up the roasted vegetables. Try it with Brussels sprouts or roasted carrots. Search for "Slow-Cooker Shredded Chicken” in the WW app for a chicken recipe you can batch cook for this bowl or any other recipe that needs a little protein boost. You can extend the hummus with a squeeze of fresh lemon juice, if desired.

Cooked quinoa

Cooked sweet potato

½ cup(s), wedges

Cooked broccoli

½ cup(s), florets

Olive oil

1 tsp, that was used to roast the potatoes and broccoli

Cooked shredded chicken breast

½ cup(s), or chopped chicken breast

Plain hummus

Instructions

  1. In a large bowl, toss together quinoa, sweet potatoes, broccoli, and chicken. Add hummus and gently combine. Serve warm or at room temperature.
  2. Serving size: 1 salad
