Roasted Cauliflower with Garlic Gremolata

For a fancier presentation, cut your cauliflower into several thick “steaks” instead of florets
uncooked cauliflower1 head(s), large, cut into 1-in florets
cooking spray5 spray(s)
kosher salt¾ tsp
black pepper¼ tsp
fresh parsley2 Tbsp, chopped
lemon zest1 Tbsp, minced
minced garlic1 tsp
- Preheat oven to 425°F. Line a baking pan with parchment paper.
- Place cauliflower on prepared pan and coat with cooking spray; season with salt and pepper. Bake, stirring once halfway throughcooking, until well-browned, 30-35 minutes.
- Combine parsley, lemon zest and garlic in a small bowl; toss with cauliflower just before serving.
