Here's a delicious red wine and Dijon-vinaigrette that you’ll find yourself making again and again. It tastes great on all your favorite greens and sandwiches. If you're making it in advance, simply whisk dressing again to emulsify before serving. You'll want to have a batch on hand in your fridge at all times; you'll never go back to the store-bought stuff again. It takes just 5 minutes to make and features fat-free vegetable broth, which helps cut down on the calories, olive oil, and garlic, along with the red wine vinegar and tangy Dijon mustard. You could also stir in some Greek yogurt to make it creamy.

Ingredients

Low sodium vegetable broth

¾ cup(s)

Red wine vinegar

1½ Tbsp

Olive oil

1½ Tbsp

Dijon mustard

1 Tbsp

Garlic

1 clove(s), minced

Table salt

tsp, or to taste

Black pepper

Instructions

  1. Pour broth into a medium-size bowl and stir in vinegar, oil and mustard; whisk until combined. Stir in garlic, salt and pepper; mix well. Yields about 2 tablespoons per serving.
