Red quinoa salad with oranges
1 cup(s), red variety, rinsed
3 medium, navel variety
4 large, with tops, halved and thinly sliced and tops torn
Low fat red wine vinaigrette salad dressing
Reduced-fat feta cheese
6 Tbsp, crumbled
- Prepare quinoa according to package directions. Let cool.
- Meanwhile, halve and squeeze juice from 1 orange (you should have about 1/3 cup). Pour into salad bowl. Cut sections from remaining 2 oranges and add to bowl.
- Add cooled quinoa, radishes and tops, vinaigrette, salt, and pepper to orange mixture and gently toss until mixed well. Sprinkle with feta.
- Per serving: about 1 cup
