Use these two-ingredient flat breads with your favorite sandwich stuffings, taco fillings, or pizza toppings. They will last a few days in a covered container in the fridge. Reheat or enjoy at room temperature.

Cooking spray

Dried red lentils

1 cup(s)

Seasoning salt

1½ tsp, or to taste

Fresh parsley

2 Tbsp, or scallions, finely chopped (optional)

Instructions

  1. Place lentils and 2 cups of water in a blender container; cover and let sit at room temperature for 3 hours. Puree the lentil mixture until smooth, cover, and refrigerate for 5 hours until thick and foamy.
  2. Coat a 12-inch nonstick skillet with cooking spray and heat over medium heat. Spoon a scant 1/4 cup of the lentil batter onto the pan, spread it out into a 5-inch circle, and sprinkle with some seasoning salt and optional parsley or scallions (you should be able to make 2 breads at a time). Cook until lightly browned on the bottom, about 1 1/2 to 2 minutes. Carefully flip and cook for 1 1/2 to 2 minutes more until cooked through. Repeat with remaining ingredients to make 8 breads.
