Red Cabbage Slaw with Lime and Onions

This colorful, crunchy slaw is great either alongside or on top of tacos.
fresh lime juice¼ cup(s), or to taste
kosher salt½ tsp, or to taste
uncooked red onion(s)1 medium, thinly sliced in half moons
uncooked red cabbage6 cup(s), very thinly sliced (about 1 lb)
cilantro12 sprig(s), leaves only, finely chopped ( or to taste)
- Place lime juice, salt, onion and cabbage in a large bowl; use your hands to scrunch everything together until cabbage is slightly softened. Stir in cilantro; serve immediately or cover and refrigerate for up to 2 days before serving (season to taste with more lime and/or salt before serving).
