This recipe makes a delightful, delicious side dish when served with turkey or pork. It takes less than a half an hour to make and all comes together in just one pot. A lot of the cook time is hands-off too as you let the ingredients simmer together. The sliced onions, red cabbage, and Golden Delicious apple are nicely complemented by tasty caraway seeds and red wine vinegar. It's the perfect balance of color, texture, and flavor. If you want additional sweetness other than that provided by the apple, you can stir in 1 tablespoon of honey with the cabbage and also increase the vinegar to 2 tablespoons.

Ingredients

Olive oil

1 tsp

Onion

1 medium, sliced

Red cabbage

5 cup(s), sliced

Caraway seeds

½ tsp

Water

½ cup(s)

Apple

1 medium, Golden Delicious, peeled and diced

Red wine vinegar

1 tsp

Table salt

½ tsp

Black pepper

¼ tsp, freshly ground

Instructions

  1. Heat the oil in a large nonstick skillet or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Stir in the cabbage, caraway seeds, and water. Simmer, covered, until the cabbage is barely tender, about 8 minutes. Add the apple, vinegar, salt, and pepper. Simmer, covered, until the cabbage is very tender, about 6 minutes longer. Yields about 2/3 of a cup per serving.
