This recipe makes a delightful side dish when served with turkey or pork.

Ingredients

olive oil

1 tsp

uncooked onion(s)

1 medium, sliced

uncooked red cabbage

5 cup(s), sliced

caraway seeds

½ tsp

water

½ cup(s)

fresh apple(s)

1 medium, Golden Delicious, peeled and diced

red wine vinegar

1 tsp

table salt

½ tsp

black pepper

¼ tsp, freshly ground

Instructions

  1. Heat the oil in a large nonstick skillet or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Stir in the cabbage, caraway seeds, and water. Simmer, covered, until the cabbage is barely tender, about 8 minutes. Add the apple, vinegar, salt, and pepper. Simmer, covered, until the cabbage is very tender, about 6 minutes longer. Yields about 2/3 of a cup per serving.

Notes

If you want additional sweetness other than that provided by the apple, stir in 1 tablespoon of honey with the cabbage and increase the vinegar to 2 tablespoons.
