Short for time? No problem. Simply let the frozen granita sit for about 10 minutes, then use a fork to scrape it all until it's light and fluffy. Otherwise, you have to stir it every half hour with a fork, and it takes about six hours for the granita to freeze properly. It's the perfect recipe to make in the morning to have it ready to go after dinner is done. The best part is it requires only five ingredients, one of which is water. To make it, simply purée the fresh raspberries and simple syrup in a food processor, then stir in the lime juice. After that, all you have to do is let it freeze.

Ingredients

Sugar

½ cup(s)

Water

½ cup(s)

Raspberries

6 cup(s)

Fresh lime juice

2 Tbsp

Lime zest

1 tsp

Instructions

  1. Boil sugar and water in a small saucepan, stirring constantly, until sugar dissolves. Let syrup cool.
  2. Purée raspberries and syrup in a food processor. Add lime juice. Mixture should be just thick enough to stick to the back of a spoon. If too thick, add a little water.
  3. Pour into a shallow plastic container or baking dish. Cover and freeze. Stir with a fork approximately every 30 minutes until frozen, about six hours.
  4. Divide into eight dessert glasses and garnish with lime zest if desired.
