fat free cottage cheese

Weight Watchers Reduced Fat Mexican style blend shredded cheese

½ cup(s)

canned green chili peppers

4½ oz, mild variety, chopped

all-purpose flour

6 Tbsp

baking powder

¾ tsp


2 large, lightly beaten

egg white(s)

1 large, lightly beaten

table salt

¼ tsp


  1. Preheat the oven to 350°F. Spray an 8-inch-square baking pan with nonstick spray.
  2. Combine the cottage cheese, Monterey Jack cheese, chiles, flour, baking powder, eggs, egg white, and salt in a large bowl until well blended. Scrape the mixture into the pan. Bake until the top is golden and a knife inserted in the center comes out clean, about 30 minutes. Cut into 16 squares and serve at once. Or cool completely in the pan on a rack then cut into 16 squares and serve at room temperature. Yields 2 pieces per serving.


You can serve them as “party food” or as a main course for dinner. We think salsa is a good condiment to serve with them.For a light lunch or dinner, bake in a 9-inch round pie plate and cut into wedges.
