Instant polenta is what makes this recipe a snap to prepare. Even though it cooks in just minutes, the polenta is still a whole grain and a great, healthy way to start your day! Once you start cooking with it, you won't be able to stop, as it complements a variety of sauces, meats, and cheeses. Our polenta-ricotta dish is truly satisfying as is, but you can sprinkle the polenta with finely grated lemon or orange zest or ground cinnamon or nutmeg for another tasty layer of flavor. Definitely feel free to experiment with whatever you prefer or have on hand.

Instructions

  1. Combine milk, water, and salt in medium saucepan and bring to boil over medium-high heat.
  2. Meanwhile, combine ricotta, brown sugar, and vanilla in food processor and process until smooth. Set aside.
  3. Slowly add polenta to milk-water mixture in thin, steady stream, whisking constantly. Cook, stirring constantly, until polenta has thickened and is creamy, 3-5 minutes. Divide polenta evenly among 4 bowls and top evenly with ricotta mixture.
