- Combine milk, water, and salt in medium saucepan and bring to boil over medium-high heat.
- Meanwhile, combine ricotta, brown sugar, and vanilla in food processor and process until smooth. Set aside.
- Slowly add polenta to milk-water mixture in thin, steady stream, whisking constantly. Cook, stirring constantly, until polenta has thickened and is creamy, 3-5 minutes. Divide polenta evenly among 4 bowls and top evenly with ricotta mixture.
