Instant polenta is what makes this recipe a snap to prepare. Even though it cooks in just minutes, the polenta is still a whole grain and a great way to start your day!

Ingredients

low-fat milk

water

part-skim ricotta cheese

unpacked light brown sugar

vanilla extract

uncooked instant polenta

½ cup(s)

Instructions

  1. Combine milk, water, and salt in medium saucepan and bring to boil over medium-high heat.
  2. Meanwhile, combine ricotta, brown sugar, and vanilla in food processor and process until smooth. Set aside.
  3. Slowly add polenta to milk-water mixture in thin, steady stream, whisking constantly. Cook, stirring constantly, until polenta has thickened and is creamy, 3-5 minutes. Divide polenta evenly among 4 bowls and top evenly with ricotta mixture.
  4. Per serving: 2/3 cup

Notes

Our polenta-ricotta dish is truly satisfying as is, but you can sprinkle the polenta with finely grated lemon or orange zest or ground cinnamon for another tasty layer of flavor.
