This elegant dessert is the perfect ending to a fall meal. The best part: It only requires 6 ingredients, one of which is mineral water. Tender poached pears are covered with a chocolatey-sweet, creamy cranberry sauce. It's so delicious and easy and to make and impressive-looking that you may even serve this for dessert at Thanksgiving, as this recipe can be scaled up for a crowd. The double-team of cranberry juice cocktail and canned cranberry sauce brings out lots of fruity flavor yet keeps the grocery shopping you have to do simple and convenient. Getting in those fruit servings never tasted so good!

Ingredients

Cranberry juice cocktail

¾ fl oz

Mineral water

1¼ fl oz

Pear

4 medium, peeled, cored with stem intact and sliced in half

Canned cranberry sauce

6 oz, jellied

Milk chocolate chips

3 Tbsp, (or 1 1/2 oz)

Raspberries

½ cup(s)

Instructions

  1. Bring juice and water to a boil in a large saucepan over high heat; place pears in pan, cover and simmer on low heat until pears are tender when pieced with a fork, about 15 minutes (turn pears several times during cooking). Remove saucepan from heat, let cool to room temperature and refrigerate until ready to serve.
  2. Combine cranberry sauce and chocolate chips in a medium saucepan; melt over medium heat, whisking occasionally, until smooth.
  3. Remove pears from liquid; drain. To serve, spoon about 2 1/2 tablespoons chocolate-cranberry sauce onto each of 4 dessert plates. Top each with 2 pear halves and decorate with 2 tablespoons of raspberries. Serve immediately.
