When you're in the mood for pizza but also want to amp up your veggie intake, make this super-tasty pizza-stuffed spaghetti squash. Fresh basil adds a lovely pop of flavor to the finished dish but you can also sprinkle on your favorite pizza toppings such as Italian seasoning, red pepper flakes, or dried oregano.

Ingredients

Uncooked spaghetti squash

1 large, halved and seeds removed

Olive oil

1 Tbsp

Garlic clove

2 clove(s), minced

Kosher salt

¼ tsp

Black pepper

tsp, freshly ground

Store-bought marinara sauce

1½ cup(s), or pizza sauce

Fresh mozzarella cheese

2 oz, roughly torn

Grated Parmesan cheese

1 Tbsp

Fresh basil

¼ cup(s), thinly sliced

Instructions

  1. Preheat the oven to 425℉. Line a rimmed baking sheet with parchment paper.
  2. Place the squash halves on the prepared baking sheet, cut-side up; coat with the oil. Rub the garlic onto the cut-side of each squash half; sprinkle with salt and pepper. Flip the squash halves over and make a few holes in the skin of each half with a fork. Roast, cut-side down, until tender, about 30 minutes. Remove from the oven and let cool for 5 minutes.
  3. Using a fork, scrape the spaghetti squash flesh into strands to form “noodles.” Top each squash half with 3/4 cup of sauce, 1 oz of mozzarella, and ½ of tbsp Parmesan. Return the pan to the oven; cook until the cheese is bubbly and starting to brown, 15 to 18 minutes. Let cool for 5 minutes; serve garnished with basil.
  4. Serving size: 1 squash half

Notes

If your squash strands seem watery, place them in a colander in your sink for 5 minutes. Gently pat them dry with a clean kitchen towel and place them back in the squash halves.
