Now you can enjoy your favorite steak house dish on the go. It's packed full of bell peppers, Spanish onions, and a couple garlic cloves. We like cooking with flank steak for easy weeknight dinners or lunch prep since it's rather lean and is done quickly. For this recipe, heating up the cubed steak pieces in a hot skillet takes just 2 minutes per side. Simply place the cooked steak on the bottom of each roll and then arrange those perfectly softened bell peppers and onions over top. Wrap it up in some foil and indulge for a hearty lunch or a quick, fun dinner.

Ingredients

Bell pepper

3 item(s), medium, assorted colors, sliced

Onion

1 large, Spanish, thinly sliced

Garlic

2 clove(s), finely chopped

Table salt

½ tsp

Black pepper

¼ tsp

Uncooked lean flank steak

1 pound(s), cubed

Wheat bread

4 oz, 4 (2-ounce) hero rolls, split and toasted

Instructions

  1. Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the bell peppers and cook, stirring frequently, until crisp-tender, about 3 minutes. Add the onion, garlic, salt, and black pepper; cook until the vegetables are lightly browned and softened, about 8 minutes longer. Transfer the vegetable mixture to a bowl and keep warm.
  2. Wipe out the skillet. Spray the skillet with nonstick spray and set over medium-high heat. Add the steaks and cook until browned and cooked through, about 2 minutes on each side.
  3. Place 1 steak in each roll and top with the bell pepper mixture. Yields 1 hero sandwich per serving.
