Pepper Steak Heroes

uncooked bell pepper(s)3 item(s), medium, assorted colors, sliced
uncooked onion(s)1 large, Spanish, thinly sliced
garlic clove(s)2 clove(s), medium, finely chopped
table salt½ tsp
black pepper¼ tsp
uncooked lean flank steak1 pound(s), cubed
wheat bread4 oz, 4 (2-ounce) hero rolls, split and toasted
- Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the bell peppers and cook, stirring frequently, until crisp-tender, about 3 minutes. Add the onion, garlic, salt, and black pepper; cook until the vegetables are lightly browned and softened, about 8 minutes longer. Transfer the vegetable mixture to a bowl and keep warm.
- Wipe out the skillet. Spray the skillet with nonstick spray and set over medium-high heat. Add the steaks and cook until browned and cooked through, about 2 minutes on each side.
- Place 1 steak in each roll and top with the bell pepper mixture. Yields 1 hero sandwich per serving.
