If you don't have fish sauce on hand for this stir-fry, substitute it with half a tablespoon extra soy sauce. But we highly recommend you invest in some, as it adds so much umami goodness to a variety of recipes. You have to cook the meat and veggies in stages, but like most stir-fries, it comes together pretty quickly. First you brown some garlic and ginger, then cook thin strips of beef. Brown the onions and bell pepper next, then add the broccoli. When the broccoli is crisp-tender, the components all come together along with the sauce, which features the aforementioned fish sauce, soy sauce, lime juice, chili sauce, brown sugar, and peanut butter. The stir-fry is topped with fresh cilantro and basil and some bean sprouts and cooked down slightly just before serving.
