Double the ingredients for the Pastry Dough for Single Crust; proceed as directed through step 1. Divide the dough in half. Shape each piece of dough into a disk.

unsalted butter1 Tbsp, cold, cut into pieces
apple cider vinegar1 tsp
water4 Tbsp, ice cold
- Combine the flour, confectioners’ sugar, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the oil and butter until the mixture resembles coarse crumbs. Combine the water and vinegar in a small bowl. Gradually add to the flour mixture, tossing lightly with a fork until the pastry is just moist enough to hold together.
- Shape the dough into a disk. Wrap in plastic wrap and refrigerate until chilled, at least 30 minutes or up to 1 day. Yields 1/8 of dough per serving.
