If you love chocolate and coffee, then you will absolutely love these mocha chocolate chip blondies. They are moist, dense, and have the perfect combination of chocolate and coffee. Also, they are packed full of fiber and protein thanks to the chickpeas, peanut powder, and protein powder, and they only take 30 minutes to make. And they are easy. The batter is made in the food processor, which quickly blends everything together; the chocolate chips get pulsed in at the end. The batter then gets poured into the pan and baked. Put your own twist on these bars by substituting cinnamon chips, butterscotch morsels, or toffee bits for the chocolate chips.

Ingredients

Canned chickpeas (garbanzo beans)

Instructions

  1. Add all ingredients except for chocolate chips to a food processor. Blend until a smooth batter forms.
  2. Add 1/2 cup chocolate chips to the food processor and pulse a few times to incorporate.
  3. Line a 6 × 8-inch glass baking dish with foil and spray with cooking spray. Spoon batter into dish. Sprinkle top with remaining 1/4 cup chocolate chips.
  4. Bake for 20 minutes or until a knife comes out clean. Let completely cool then slice into 8 bars.
