Here's a quick and easy breakfast—or even a snack or dessert—with fresh fruit, yogurt, and a lovely charred top. It’s perfect for summer when so much beautiful fruit is in season, and the cook time is just about 3 minutes under the high heat of the broiler. A gratin is a dish that incorporates a browned crust. In this case, it’s a topping comprised of yogurt, brown sugar, and a freshly grated lime zest. You can use whatever fruit you like, either fresh or frozen. Try any type of berries as well as peaches and pineapple. Watch this closely while it is in the oven so you don’t overcook it. Usually you can smell the sugar caramelizing.

Ingredients

Plain fat free Greek yogurt

cup(s)

Packed brown sugar

3½ tsp, divided

Lime zest

½ tsp, grated, or 1⁄4 tsp vanilla extract

Mixed berries

cup(s), fresh or thawed frozen and unsweetened

Instructions

  1. Preheat broiler.
  2. In small bowl, combine yogurt, 2 tsp brown sugar, and lime zest. If using strawberries, hull and slice them. If using frozen fruit, drain it very well. In shallow flameproof 6- or 8-oz gratin or crème brûlée dish, or in ramekin or custard cup, place berries. Over berries, spoon yogurt mixture. Sprinkle with remaining 11⁄2 tsp brown sugar.
  3. Broil 5 to 6 inches from heat until berries are warm and topping is browned and bubbling (you should be able to smell sugar caramelizing), 3 to 5 minutes. Serve warm.
