Traditional pesto gets a tiny twist with the addition of cooling, fresh mint. And thanks to your food processor or blender, it takes just minutes to make. Serve it over warm or cold pasta, paired with grilled or roasted vegetables, on a pizza in place of a tomato-based sauce, and stirred into soup. A little crushed red pepper gives this pesto a tiny hit of heat, but you can decrease it or omit it, if you prefer a completely mild sauce. When buying the herbs, be sure to choose basil and mint that is brightly colored and fresh looking with no signs of wilting or bruising.


Ingredients
Peppermint leaves
3 cup(s), fresh, packed
Fresh basil
1 cup(s), fresh, packed
Chicken broth
¼ cup(s)
Olive oil
2 Tbsp, extra-virgin
Pine nuts (unsalted, raw or dry roasted, no sugar added)
2 Tbsp, toasted
Garlic
2 clove(s)
Fresh lemon juice
1 Tbsp
Kosher salt
1 tsp
Crushed red pepper flakes
¼ tsp, or to taste
Instructions

Combine all ingredients in a food processor or blender. Blend on high until smooth and combined (scraping down sides of bowl as necessary). Yields about 2 tablespoons per serving.
