Here is a fun, lighter twist on nachos—but without the fried tortilla chips. Instead, this quick Mexican-inspired dish is ready in just 15 minutes. The key is making your own seasoned potato chips in the microwave, and then topping them with black beans, cheese, and salsa to create a hearty, easy meal, snack, or party appetizer. You can also top these nachos with fresh guacamole, sliced black olives, or diced jalapeños for some additional color, texture, and flavor. Experiment with a ready-made corn-based salsa, mango or pineapple salsa, or salsa verde to vary the flavor of this easy dish.

Ground cumin

  1. Cut the potato into 3⁄8-inch-thick slices; arrange in a single layer in a microwavable dish. Sprinkle the potatoes with the cumin, salt, and pepper. Cover with plastic wrap, then prick a few holes in the plastic to vent. Microwave on High until tender, 6 minutes.
  2. Spoon the salsa over the potatoes; sprinkle with the beans and cheese. Microwave, uncovered, on Medium until the cheese is melted, 1 1⁄2 – 2 minutes. Sprinkle with the scallion and serve at once. Yields 3 nachos per serving.
