The key is making your own seasoned potato chips in the microwave, and then topping them with black beans, cheese, and salsa to create a hearty, easy meal, snack, or party appetizer. You can also top these nachos with fresh guacamole, sliced black olives, or diced jalapeños for some additional color, texture, and flavor. Experiment with a ready-made corn-based salsa, mango or pineapple salsa, or salsa verde to vary the flavor of this easy dish.

Instructions

  1. Cut the potato into 3⁄8-inch-thick slices; arrange in a single layer in a microwavable dish. Sprinkle the potatoes with the cumin, salt, and pepper. Cover with plastic wrap, then prick a few holes in the plastic to vent. Microwave on High until tender, 6 minutes.
  2. Spoon the salsa over the potatoes; sprinkle with the beans and cheese. Microwave, uncovered, on Medium until the cheese is melted, 1 1⁄2 – 2 minutes. Sprinkle with the scallion and serve at once.
  3. Yields 3 nachos per serving.
