This easy sloppy joe-inspired meal puts a Mexican twist on the classic American dish, including a tasty sauce topper to boot. Ground chicken, corn, and black beans boost the nutrition of the traditional filling, and it’s served in homemade crispy tortilla cups that bake up in the oven while you prepare the filling. The lime-infused mayonnaise is a tasty and easy-to-make topping. You’ll need two limes to yield enough zest and juice to make the sauce. Fat free flour tortilla

4 small, 6-inch

Instructions

  1. Preheat the oven to 400°F. Place 4 (10-ounce) custard cups on a baking sheet. Spray the insides of the cups with nonstick spray. Gently press a tortilla into each cup. Bake until golden and crisp, about 8 minutes. Let the tortillas cool in the cups, about 2 minutes. Carefully transfer the tortilla cups to a plate.
  2. Meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the chicken, salt, and pepper; cook, breaking the chicken apart with a wooden spoon, until browned, about 6 minutes. Stir in the salsa and heat through, about 3 minutes.
  3. Mix the mayonnaise, onion, lime zest, and lime juice in a small bowl. Spoon about 3⁄4 cup chicken mixture into each tortilla cup and top each with 1 1⁄2 tablespoons of the mayonnaise mixture. Yields 1 filled tortilla cup per serving.
