Ingredients

Cucumber

1 cup(s), chopped

Grape tomatoes

1 cup(s), halved

Cooked quinoa

½ cup(s), cooled

Scallions

2 medium, chopped

Extra virgin olive oil

2 tsp

Fresh lemon juice

1 tsp

Kosher salt

¼ tsp

Black pepper

¼ tsp

Baby spinach

1 cup(s)

Vegan sausage

5 oz, cooked and sliced, about 2 links

Instructions

In medium bowl, toss cucumber, tomatoes, quinoa, scallions, oil, lemon juice, salt, and black pepper.

Divide spinach, quinoa mixture, and sausage between 2 bowls or storage containers. Cover and refrigerate.
