Extra virgin olive oil
Fresh lemon juice
Fresh baby spinach
5 oz, cooked and sliced, about 2 links
- In medium bowl, toss cucumber, tomatoes, quinoa, scallions, oil, lemon juice, salt, and black pepper.
- Divide spinach, quinoa mixture, and sausage between 2 bowls or storage containers. Cover and refrigerate.
