Sorbets are the ultimate warm weather treat. Cooling and refreshing, they offer ample opportunity to enjoy and use up fresh summer fruit. At their simplest, sorbets are just fresh fruit and a little sweetener that have been pureed and then frozen. It’s important to remember that freezing dulls sweet flavor so the sorbet mixture should taste sweeter than you’d prefer for the final sorbet before it gets frozen. Additionally, the sweetener is important for creating sorbet’s signature texture—too little and the sorbet will be icy while too much will be too slushy. When it’s just right, the texture will be wonderfully creamy.

Ingredients

Mango

3 cup(s), ripe, peeled, pitted, and diced

Papaya

3 cup(s), ripe, peeled, pitted, and diced

Lime zest

2 tsp

Fresh lime juice

2 Tbsp

Splenda Granulated no calorie sweetener

2 tsp, or other brand sweetener

Blueberries

1 cup(s), optional

Instructions

  1. Combine mangoes, papaya, lime zest and juice, and artificial sweetener in food processor and pulse until smooth. Transfer to large bowl. Cover and refrigerate until thoroughly chilled, about 2 hours. Transfer fruit mixture to ice-cream maker and freeze according to manufacturer's instructions. Transfer sorbet to freezer container and freeze until firm, at least 2 hours or up to 4 days. Serve with blueberries, if desired
