Aguas frescas, or fresh waters, are refreshing and cooling fresh fruit drinks that are popular in Latin America. In their most straight-forward form, they are made by blending fresh fruit, water, and fresh lime juice. Just blend the fruit and water in a blender, sweeten to taste if you like and stir in the lime juice. If you are making an agua fresca with a fibrous fruit, such as pineapple, you may want to strain the mixture through a sieve before serving. To cut and pit a mango, stand it on a long side, hold a sharp knife slightly off center, and carefully slice through the flesh, cutting off an oval piece of mango to separate it from the pit. Repeat on the other side.
