Cool off on a warm day with ripe melon salad in a light sweetened citrus dressing that can served as an easy side dish or appetizer. This recipe used a mix of three different melons, but you could use whatever combination you like or stick to just one variety. Look for watermelons that have a yellow spot on the bottom on the bottom, which notes that it ripened on the vine in the field instead of being plucked too early. But avoid those with multiple brown or soft spots, cracks, or other signs of damage. Both honeydew and cantaloupe should smell fragrant, particularly at the stem, when it is ripe.

Sugar

2 Tbsp

Fresh lemon juice

3 Tbsp

Fresh ginger

2 tsp, peeled and grated

Cantaloupe

1 cup(s), diced, cubed

Watermelon

1 cup(s), cubed

Honeydew melon

1 cup(s), ball(s), cubed

Instructions

  1. Combine first 3 ingredients in a small bowl; stir with a whisk (sugar does not have to dissolve).
  2. Place fruit in a shallow bowl; pour lemon mixture over fruit. Toss gently to coat; let stand 5 minutes. Yield: 4 3⁄4-cup servings.
