This easy, tasty six-ingredient snack is ready in just 10 minutes. The mix of richly flavored cheese paired with fresh herbs and bright lemon zest makes traditional air-popped popcorn look and taste special. Use grated Parmesan cheese in place of the pecorino and substitute any fresh herbs that you like—rosemary would be tasty. Since popcorn contains the hull, endosperm, and germ, it is a whole grain, making it a healthy, high-fiber snack option. Fun fact: The oldest popped kernels of corn were discovered in a cave in New Mexico in 1948. The popped corn was carbon dated and shown to be about 5,600 years old.

Plain air popped popcorn (prepared without oil)

Instructions

  1. Put popcorn into very large bowl. Drizzle with oil, thyme, lemon zest, and salt, tossing to coat evenly. Gradually sprinkle cheese over popcorn, tossing to coat evenly.
