Here's a tasty, no-cook way to use up your Easter ham: Pair it with sweet pineapple and red bell pepper and fresh mixed greens for an easy one-serving salad. Plus, it’s ready in just 10 minutes. You can purchase pre-cut pineapple from the produce section of your grocery store or cut up a fresh pineapple yourself. When choosing fresh pineapple, let your nose guide you. Ripe pineapple will have a sweet aroma which means it is ready to be cut up and enjoyed. The skin can also take on a golden color, as opposed to green, but the smell will always be the most valuable indicator of ripeness.

Ingredients

Mixed greens

Cooked lean ham

3 oz, cut into chunks

Pineapple

½ cup(s), fresh chunks (plus 1 Tbsp juice - from bottom of pineapple container)

Red bell pepper

½ cup(s), cut into thin strips

Cilantro
