Leftover Easter Ham & Pineapple Salad

Here's a tasty way to use up your Easter ham.
mixed greens2 cup(s), spring mix variety
cooked lean ham3 oz, cut into chunks
pineapple½ cup(s), fresh chunks (plus 1 Tbsp juice - from bottom of pineapple container)
sweet red pepper(s)½ cup(s), cut into thin strips
cilantro¼ cup(s), roughly torn
fresh lime juice1 ½ tsp
extra virgin olive oil1 tsp
table salt1 pinch
black pepper1 pinch
- Toss all ingredients in a bowl until mixed and coated. Season with salt and pepper to taste.
