Combine all the ingredients for these waffles in your blender, process until smooth, and you’ve got a deliciously homemade, gluten-free waffle batter ready to use. Top your cooked waffles with fresh fruit such as sliced bananas, blueberries, or strawberries. Your favorite pancake or maple syrup is optional.

Cooking spray

Uncooked rolled oats

1 cup(s), old-fashioned

Unsweetened vanilla almond milk

½ cup(s), or similar milk product

Vanilla extract

1½ tsp

Egg

1 item(s), large

Banana

1 small

Ground cinnamon

½ tsp

Baking powder

½ tsp

Instructions

  1. Preheat a mini waffle maker; coat with cooking spray.
  2. Combine all ingredients in a blender and blend until almost a smooth batter; allow to rest for 5 minutes.
  3. To make waffles, pour about 1/4 cup batter onto prepared waffle maker; close and cook through, about 2 to 3 minutes. Repeat with remaining batter to make 5 waffles.
  4. Serving size: 1 waffle
