This fresher-than-from-the-farmstand apple crisp is a perfect portion for one. It’s just the right size for Coach Tess when she wants to enjoy dessert but doesn’t want a whole apple crisp on hand. The recipe is inspired by the apple crisp Tess’ Grandmother used to make but is made lighter by relying on the natural sweetness of a Honeycrisp apple to cut back on sugar, and by swapping in just a touch of coconut oil for the usual amount of butter. Multiply the recipe for the number of crisps you want to make. When you have fresh pears on hand, swap one in for the apple.
