This fresher-than-from-the-farmstand apple crisp is a perfect portion for one. It’s just the right size for Coach Tess when she wants to enjoy dessert but doesn’t want a whole apple crisp on hand. The recipe is inspired by the apple crisp Tess’ Grandmother used to make but is made lighter by relying on the natural sweetness of a Honeycrisp apple to cut back on sugar, and by swapping in just a touch of coconut oil for the usual amount of butter. Multiply the recipe for the number of crisps you want to make. When you have fresh pears on hand, swap one in for the apple.


Fresh apple(s)

1 large, Honeycrisp, peeled, cored, thinly sliced


½ tsp, granulated

Ground cinnamon

¼ tsp

Ground nutmeg

¼ tsp

Ground ginger

¼ tsp

Fresh lemon juice

1 Tbsp

Old-fashioned rolled oats

1 Tbsp

Packed light brown sugar

1 Tbsp

All-purpose flour

1 Tbsp

Coconut oil

1 tsp, melted


  1. Preheat oven to 375ºF.
  2. In a small bowl, toss together apple slices, granulated sugar, cinnamon, nutmeg, ginger, and lemon juice; spoon into a 6 oz ramekin.
  3. In another small bowl, combine oats, brown sugar, and flour; spoon over apples and then drizzle with oil.
  4. Bake until fruit is bubbly and topping is golden, about 35 to 45 minutes. Cool at least 10 minutes before serving.
  5. Serving size: 1 crisp
