Turkey taco lettuce cups

8 leaf/leaves, large

Shredded reduced fat Mexican-style cheese blend

Instructions

Heat oil in a large nonstick skillet over medium heat. Once hot, add yellow onion and red pepper; cook, stirring frequently, until onions are translucent, about 3 to 5 minutes.

And turkey to the skillet; cook, stirring frequently until turkey is cooked through, about 5 to 7 minutes.

Stir in taco seasoning and pico de gallo or salsa; reduce heat to low, cover, and let turkey mixture simmer for 5 minutes.

When ready to serve, divide turkey mixture amongst lettuce leaves; top each with some tomatoes, cheese, red onion, and cilantro.
