Grilled onion and sausage make the of this flavorful salad that also contains mint, pine nuts, figs, radicchio and mint. Pomegranate molasses, a key ingredient in the dressing, is traditionally found in Middle Eastern dishes, and can be store-bought or homemade. It's basically pomegranate juice that has been reduced to a syrup with an intense flavor that's not too sweet.

Onion

1 medium, cut into 1⁄2-inch-thick rings

Chicken apple sausage

12 oz, fully cooked (4 3-oz sausages)

Extra virgin olive oil

2 Tbsp

Fresh lemon juice

2 Tbsp

Pomegranate molasses

2 Tbsp

Table salt

¾ tsp

Black pepper

½ tsp

Radicchio

4 oz, 1 head, trimmed, leaves torn

Baby spinach

4 cup(s)

Fresh mint leaves

½ cup(s), torn

Fresh figs

8 medium, halved

Pine nuts

4 tsp, toasted

Instructions

  1. Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire in charcoal grill. Grill onion and sausages, turning onion once and sausages occasionally, until onion is tender and sausages are heated through, 6 to 8 minutes.
  2. Meanwhile, in large bowl, whisk oil, lemon juice, molasses, salt, and black pepper for dressing.
  3. Cut each sausage crosswise on angle into 3 pieces. Add radicchio, spinach, and mint to bowl with dressing and toss to coat. Divide salad among 4 plates. Top each with sausage, onion, figs, and pine nuts.
  4. Serving size: 3 sausage pieces, 2 figs, and about 2 cups onion and salad
