Turkey burgers stuffed with zucchini are a great way to add more vegetables to your meal. The zucchini also helps to moisten the burgers, while chili powder, cumin and salt add a nice flavor. Breadcrumbs help the patties to hold their shape while adding a nice bit of texture. When shaping the burgers, you want to handle them with a light touch. The more that you mash and shape the burger, the tougher they become. When cooking burgers in the skillet, they should sizzle when they hit the pan. When you flip them, there should be a nice sear on the underside.

Ingredients

Uncooked 99% lean ground turkey breast

Uncooked zucchini

1 small, shredded

Dried plain breadcrumbs

Canned diced hot green chiles

4 oz, drained

Reduced fat cheddar cheese

Whole wheat sandwich thins

Instructions

  1. Combine turkey, zucchini, bread crumbs, chili powder, cumin, and salt in large bowl. Shape into 4 (3⁄4-inch-thick) patties.
  2. Heat oil in large nonstick skillet over medium heat. Add patties and cook until browned and instant-read thermometer inserted into sides of patties registers 165°F, about 6 minutes per side.
  3. Meanwhile, stir together chiles and Cheddar in medium bowl.
  4. Top burgers evenly with chile mixture. Reduce heat to low; cover skillet and cook until cheese melts, about 2 minutes. Serve burgers, onion, and tomato in sandwich thins.
  5. Serving size: 1 burger
