Ingredients

Corn on the cob

4 ear(s), medium

Light mayonnaise

½ Tbsp

Light sour cream

¼ cup(s)

Gochujang hot pepper paste

2 Tbsp

Lime zest

2 tsp

Fresh lime juice

1 Tbsp

Garlic clove

1 clove(s), grated

Unseasoned rice vinegar

1 Tbsp

Sugar

½ tsp

Kosher salt

¼ tsp, or to taste

Cilantro

2 Tbsp, chopped, for garnish

Cotija cheese

Instructions

  1. Cut corn into 4-inch pieces. Steam corn for 4 minutes until deep yellow and tender.
  2. In a bowl, combine mayonnaise, sour cream, gochujang, lime zest and juice, grated garlic, rice vinegar, sugar, and salt to taste. Mix until combined and brush onto the steamed corn.
  3. Top the corn with crumbled cotija cheese and chopped cilantro and enjoy!
  4. Serving size: one 4-inch piece of corn
