Dips are quintessential party food. Our recipe features canned white beans, fresh lemon juice and other pantry staples. Serve with a variety of fresh vegetables. Love garlic? Then add an extra clove or two to this delicious, creamy dip. Cooking the garlic until golden before adding to the bean dip infuses the delicious garlicky flavor into this appetizer. The dip can be made ahead and refrigerated. Bring it to room temperature before serving. You could also use this dip as a spread for a vegetable sandwich.

Ingredients

Olive oil

1 tsp, extra-virgin

Garlic

3 clove(s), minced

Canned cannellini beans

15½ oz, drained and rinsed

Fresh lemon juice

1½ Tbsp

Water

1½ Tbsp

Table salt

tsp, or to taste

Black pepper

tsp, or to taste

Paprika

½ tsp, or chopped fresh parsley (optional)

Instructions

  1. To prepare dip, heat oil in a small saucepan over medium heat; sauté garlic, stirring constantly, until garlic just begins to turn golden, about 1 to 2 minutes. Remove from heat and let cool slightly.
  2. In a food processor (or blender), combine oil mixture, beans and lemon juice. Process until smooth, slowly adding 1 to 2 tablespoons of water to obtain a thick yet creamy consistency; season to taste with salt and pepper.
  3. Transfer dip to a small bowl and garnish with paprika or chopped parsley, if desired. Serve with fresh vegetables. Yields about 1/4 cup dip per serving.
