Serve hot chocolate all summer long with this fun take on one of wintertime's favorite treats. Prepare a double — or triple — batch of the cocoa mixture and store in a covered container in the refrigerator up to 3 days so it’s ready to go. It makes for a great afternoon indulgence or serve it as dessert in a parfait or other pretty glass garnished with chocolate shavings and cinnamon or marshmallows like you might a hot chocolate drink. Or, keep it cool and summery with the addition of sliced fresh strawberries and a sprig of mint on top.

Fat free skim milk

1½ cup(s)

Sugar

¼ cup(s)

Unsweetened cocoa powder

3 Tbsp

Semisweet chocolate

2 oz, chopped

Ice cube

Instructions

  1. Combine 1/2 cup of the milk, the sugar, and cocoa in a medium saucepan and set over medium-low heat. Cook, whisking constantly, until the mixture comes to a boil, about 5 minutes. Remove the saucepan from the heat and stir in the chocolate. Let stand 5 minutes, then stir until the chocolate is melted and the mixture is smooth. Refrigerate until cold, about 20 minutes.
  2. Combine the remaining 1 cup milk, the chocolate mixture, and the ice cubes in a blender; blend on high speed until slushy. Pour evenly into 4 glasses or goblets. Serve at once with spoons. Yields 1 cup per serving.
