When your garden's in full bloom, whip up this fresh, flavorful sauce. Great as a vegetable dip, sandwich spread or condiment for grilled meat, chicken or fish.The sauce will keep up to 3 days, covered, in the refrigerator. Feel free to substitute any fresh herb for either the parsley or basil. And experiment with swapping spinach for the watercress for a milder flavor, or substitute arugula for a peppery bitter kick. The yogurt in the sauce makes it a good option for using as a dressing for salads of sliced cucumbers and tomatoes, or as a topping to avocado toast.

Ingredients

Fresh watercress

2 cup(s), tough stems removed, coarsely chopped

Fresh parsley

3 Tbsp, fresh, leaves

Scallions

1 medium, chopped (about 2 Tbsp)

Basil

3 Tbsp, fresh, leaves

Plain fat free yogurt

½ cup(s), Greek-style recommended

Table salt

½ tsp

Instructions

  1. In bowl of a blender or food processor, place all ingredients and pulse until well combined. Pour into a bowl or plastic container and refrigerate until ready to use. Yields about 1/4 cup of sauce per serving.
