French toast sticks with maple-yogurt dipping sauce

Our cinnamon-flavored French toast sticks come with a creamy yogurt sauce for dunking. Instead of dipping into syrup alone, we use a much smaller amount of maple and stir it into Greek yogurt. The reduced-calorie sandwich bread is very soft and tender. To make French toast sticks that hold up, you need to make sure to do two things: Lightly toast the bread first, until it’s a bit crusty, and dip it quickly in the milk-egg mixture (instead of soaking it).

2% reduced fat milk

Ground cinnamon

8 slice(s), lightly toasted

Instructions

  1. In a small bowl, stir together the yogurt, maple syrup, and ½ tsp of the vanilla; set aside until ready to serve.
  2. In a pie plate or shallow bowl, whisk together the milk, cinnamon, eggs, and remaining 1 tsp vanilla. Place the milk-egg mixture near the stovetop. Cut each toast slice crosswise into 3 strips; place the toast strips near the stovetop.
  3. Coat a large nonstick skillet with cooking spray. Heat the pan over medium. Quickly dip each toast strip in the milk-egg mixture, turning to coat both sides; immediately place in the skillet. Arrange about half of the pieces in the skillet so there’s room between the pieces. Cook until lightly browned and set, 2 to 3 minutes per side. Repeat with the remaining toast strips and milk-egg mixture. Sprinkle the French toast sticks with powdered sugar; serve with the yogurt sauce.
  4. Serving size: 6 French toast sticks and ¼ cup yogurt sauce
