French Lentil Bowl with Creamy Mustard Vinaigrette

This delicious bean bowl is chock full of healthy veggies atop earthy lentils at its foundation. A Mediterranean-inspired riff on the one-bowl meal, you'll love the brightness the vinaigrette gives the rich lentils. And the veggies added are the ones you know and love in a classic French tuna salad Niçoise. Hard boiled eggs add even more heft to the bowl. If you don’t have haricot vert, swap in regular green beans. Make enough lentils and veggies to duplicate this recipe the next day at lunch. You'll be the envy of the office or lunchroom.


Light mayonnaise

1 Tbsp

Uncooked shallot(s)

2 tsp, finely chopped


1 tsp

Fresh lemon juice

1 tsp

Extra virgin olive oil

1 tsp

Fresh tarragon

1 tsp, chopped

Dijon Mustard

1 tsp

Cooked lentils

1 cup(s)

Hard boiled eggs

1 item(s), large, quartered or sliced

Cooked green beans

½ cup(s), halved, French variety (haricot vert)

Yellow pepper(s)

¼ cup(s), chopped

Grape tomatoes

  1. Combine mayonnaise, shallot, water, lemon juice, oil, tarragon, and mustard in a small bowl; set aside.
  2. Place lentils in a serving bowl; top with egg, green beans, peppers, tomatoes, and olives. Drizzle with dressing; season with salt and pepper if desired.
  3. Makes 1 serving.
