We love this exotic flatbread as part of a casual party, potluck or game day buffet. Or assemble it at your desk at lunchtime and be the envy of the office. This flatbread is hearty enough to make a great light dinner on its own, served with a side salad of sliced tomatoes, cucumbers, and olives, but our favorite way to enjoy it is to share it. Labneh is an ultra-creamy cheese similar to whipped cream cheese, but with more flavor. It's made from strained yogurt, so it shares yogurt's slightly tart flavor, but is used primarily in savory preparations and dips across the Middle East. That's why we've added pistachios and fresh chopped parsley to it in this recipe and given it a garnish of za'atar, a popular Middle Eastern blend of herbs, spices, and sesame seeds that usually also features sumac, a tangy spice. You can za'atar in most specialty grocery stores or look for it in Middle Eastern markets.

Flatbread

Low-fat labneh

4 Tbsp

Shelled pistachio nuts

2 Tbsp, chopped

Fresh parsley

1 Tbsp, chopped

Lemon

½ item(s), medium, zested and juiced

Za’atar spice blend

1 Tbsp

Table salt

Instructions

  1. Preheat oven to 375°F.
  2. Place Flatout flatbread on a cookie sheet.
  3. Bake at 375°F for four minutes.
  4. Remove from the oven, and spread the labneh evenly over the flatbread, then scatter the pistachios, za’atar, lemon zest over the labneh.
  5. Add a drizzle of lemon juice and the chopped parsley before serving.
  6. Grilling method: Preheat grill to 375°F. Pre-bake the flatbread on the grill for 2 minutes. Remove flatbread from grill. Assemble flatbread ingredients according to the recipe.
