These classic deviled eggs have a tasty twist thanks to curry powder. With just the right amount of spice, this finger food will be a hit at your next cocktail party or super club. If you prefer a little more heat, stir in a pinch of cayenne pepper. We’ve garnished these little bites with cilantro but either chopped chives or parsley would make a lovely garnish too. Consider passing on serving them as a party app and enjoy them as a protein-packed mid-morning snack instead. Or, turn them into a full meal and pair them with a large garden salad chockfull of crunchy veggies.

Ingredients

Egg

4 large egg(s), white shelled-variety

Plain fat free yogurt

3 Tbsp

Curry powder

2 tsp, mild-variety

Table salt

¼ tsp

Cilantro

4 sprig(s), for garnish

Instructions

  1. Place eggs in a medium saucepan and fill with enough water to cover eggs; bring to a boil for 2 minutes. Turn off heat and cover pan; let stand covered for 10 minutes on stove. Place pan in sink and run cold water over eggs until cool (no need to drain first); peel eggs and slice each one in half lengthwise.
  2. Remove yolks and place yolks in a small bowl; mash with yogurt, curry powder and salt. Spoon yolk mixture back into egg white halves and garnish each with a small piece of cilantro. Yields 2 filled egg halves per serving.
