Before you refrigerate fish, rinse it under cold running water and pat it dry. This simple step cuts down on the bacteria on the fish's surface and slows spoilage. Always cook or freeze fish within a day or two after buying.

Ingredients

Yellow cornmeal

2 Tbsp

Smoked paprika

2 tsp, sweet variety

OLD BAY Old Bay seasoning

1 tsp, or similar product

Black pepper

1 tsp

Packed brown sugar

1 tsp

Dried thyme

1 tsp

Uncooked tilapia fillet

20 oz, 4 (5-oz) fillets

Canola oil

4 tsp

Lemon

4 wedge(s)

Instructions

  1. On a large sheet of wax paper or large flat plate, mix together cornmeal, paprika, Old Bay seasoning, black pepper, brown sugar, and thyme. Coat fish fillets in spice mixture, pressing so it adheres.
  2. Heat a large heavy skillet over medium-high heat; add oil. Add fish and coat with cooking spray. Cook until deeply browned and just opaque in center, about 4 minutes per side. Serve with lemon wedges.
  3. Serving size: 1 tilapia fillet
