Our version of this quintessential favorite is uber-decadent and will add a beautiful finishing touch to any dinner party table. While this dessert is not a make ahead recipe, you can do some steps in advance to ensure it comes together effortlessly. Before your guests arrive, separate the eggs and measure out all the ingredients. As your guest mingle before dinner, prepare the egg mixture and place in the oven as everyone begins to gather around the table. About the time everyone is finished with the main dish, your souffle will be baked to perfection. Garnish with a dusting with powdered sugar for an elegant presentation.


All-purpose flour

4 Tbsp, divided

Egg whites

6 large



Light butter

2 Tbsp

Fat free liquid creamer

4 fl oz

Unsweetened cocoa powder

  1. Heat oven to 375°F. Coat a 2-quart souffle; pan with cooking spray; coat with 2 tablespoons flour.
  2. With mixer on medium, beat whites until very soft peaks form; slowly add sugar, 1 tablespoon at a time, until incorporated and eggs are stiff and glossy.
  3. In a small pot over medium heat melt butter; whisk in remaining flour to combine. Slowly whisk in half-and-half until smooth. Remove from heat; slowly whisk in cocoa and yolks. Spoon into large bowl.
  4. In three additions fold whites into chocolate mixture. Pour into souffle; pan. Bake until evenly risen and toothpick inserted into center comes out clean, 30 minutes. Yields 1 cup per serving.
