Instructions

  1. Preheat oven to 350°F. Coat a 12-hole muffin pan with cooking spray.
  2. In a mixing bowl, combine oat flour, ground flaxseed, cocoa powder, baking powder, baking soda, and salt.
  3. In another mixing bowl, combine mashed bananas, yogurt, applesauce, eggs, orange zest and juice, maple syrup, and vanilla.
  4. Add the flour mixture to the banana mixture and stir until smooth. Stir in chocolate chips. Evenly divide batter among prepared muffin pan.
  5. Bake for 20 to 22 minutes, until a toothpick inserted in the center of a muffin comes out clean.
  6. Serving size: 1 muffin
