Your guests will adore this four ingredient appetizer. If blue cheese is too strong for your taste, try feta instead.

Ingredients

fresh cherry tomato(es)

24 medium, stems removed

blue cheese

½ cup(s), crumbled

crisp cooked bacon

4 slice(s), cut or crumbled into small pieces

chives

1 Tbsp, fresh, chopped

Instructions

  1. Cut off tops of tomatoes. With melon baller or tip of grapefruit spoon, remove seeds and discard. Fill each tomato with about 1 tsp cheese, mounding it slightly. Top evenly with bacon and sprinkle with chives.
  2. Serving size: 2 stuffed tomatoes

Notes

The tomatoes should be able to stand upright. If not, cut a thin slice of tomato off at the stem-end, so there is a flat surface for them to stand on.
