Combining celery root (also known as celeriac or knob celery) with flavorful Yukon Gold potatoes is the secret to one of the tastiest mashes around. The addition of caramelized onions makes them irresistible.

Ingredients

Canola oil

2 Tbsp

Uncooked onion

2 medium, chopped

Celery root (celeriac)

1 pound(s), trimmed, peeled, and cut into 1-inch chunks

Uncooked Yukon gold potato

1 pound(s), scrubbed and cut into 1-inch chunks

Table salt

1 tsp

White pepper

½ tsp, ground

1% low fat buttermilk

¼ cup(s), warmed

Fresh parsley

2 Tbsp, chopped

Instructions

  1. Heat oil in large skillet over medium heat. Add onions and cook, stirring frequently, until soft, about 5 minutes. Cover skillet and continue to cook, stirring occasionally, until onions are golden and meltingly tender, 20−25 minutes longer.
  2. Meanwhile, combine celery root and potato chunks in large saucepan and add enough water to cover. Bring to boil over medium-high heat; reduce heat and simmer until tender, about 15 minutes. Drain.
  3. Return celery root and potatoes to saucepan and sprinkle with salt and pepper; stir in buttermilk. With masher or wooden spoon, coarsely mash potato mixture; stir in onions and parsley.
  4. Serving size: about 1/2 cup

Notes

White pepper is usually the seasoning of choice for white mashes and purees like this one, but feel free to use black pepper if you prefer - the difference is minimal.
